Irish Potato Nachos

Cut as many potatoes as you’ve got room for (I like to gauge it as 1 large potato per person plus one “for the road”) into wedges and slather with oil. Bake until somewhat browned and crispy.

Lay out in a single layer on a cookie sheet or pizza pan (or two, or three as necessary).

Cover with cheese: cheddar, jack, mozzarella, whatever you like. Or a combination.

Sprinkle evenly over the cheese any and/or all of the following:

chopped sweet peppers

Black olives, sliced

chopped tomatoes

jalapenos, sliced

diced green onions

pre-cooked crumbled ground beef or a chicken breast sauteed and cut into small chunks (or shredded, if you prefer)

Baked in hot over (375F or thereabouts) until the cheese is completely melted and at least beginning to bubble

Serve with:

Sour Cream

Guacamole

Salsa

It’s at least marginally healthier than nachos with tortilla chips, and very filling. Goes well with Guinness.
